Grilled Chicken Breast with lemon and thyme

1 1/2 tbsp lemon juice
1/4 tspn thyme
1/2 tspn red pepper flakes
1 garlic clove, minced
1/4 cup olive oil
1/4 tspn salt
1/4 tspn pepper

4 bone in breasts

Combine ingredients, coat chicken with mixture. Marinade for a couple of hours. Grill breasts over medium-high heat ten minutes or broil 8 - 10 minutes on each side in the oven. Boneless breast, five minutes per side.

That is an excellent recipe. I just tired another over the weekend that was also pretty good and easy. The easy part being the best!

SKILLET CHICKEN AND POTATOES
(Fast, Fresh and Foolproof. 30 minutes or less, from start to finish)
1# small red potatoes
3T olive oil
1/4C flour
4 boneless, skinless chicken breasts(about 1 1/2#), trimmed
Salt & Pepper
2T unsalted(I used salted)butter
3/4C low-sodium chicken broth
1T chopped fresh sage or thyme or oregano(I used dried thyme)
2T lemon juice

1.Toss potatoes & 1T oil in micro-safe bowl. Cover w/plastic wrap, microwave on Hi 'til tender, 4-5 mins, tossing potatoes halfway thru'cooking.
2.Flour in shallow dish. Season chicken w/salt, pepper, dredge in flour, shake to remove excess. Melt 1T butter w/remainig 2T oil in skillet over med-hi heat. When foam subsides, cook chicken til browned on both sides, 3-5 mins per
side. Transfer to platter, leaving fat in skillet,cover w/foil or plate.
3.Reduce heat to med, add potatoes, cut side down, cook til browned, 4-5 mins. Transfer to platter. Add broth, herb, lemon juice. Using wooden spoon, scrape browned bits from skillet. Return chicken & juices to pan, simmer til sauce is slightly thickened, chicken cooked thru', about 5 mins.
Transfer chicken to platter w/potatoes. Whisk remaining T butter into sauce. season w/salt & pepper, pour over chicken & potaoes.
Serve. Yummy!
